Blueberry & Chia Porridge
Ingredients
For the porridge
⅓ cup oats (jumbo oats work best)
1 teaspoon chia seeds
1 cup milk (any milk of your choice)
A sprinkle of cinnamon (optional)
We’ve used cow’s milk, but this recipe works just as well with plant-based alternatives.
For the blueberry compote
A handful of frozen blueberries
Maple syrup or honey, to taste
How to make it
Add the oats, chia seeds, milk, and cinnamon (if using) to a saucepan.
Cook over a gentle heat for about 10 minutes, stirring regularly. Try to avoid letting the milk boil - we want the porridge to cook slowly over a low heat.
While the porridge cooks, make the compote. Add the frozen blueberries to a separate pan and heat gently until they soften and start to release their juice.
Sweeten the blueberries with maple syrup or honey to taste, then remove from the heat.
Spoon the porridge into a bowl, top with the warm blueberry compote, and serve straight away.
