Blueberry Protein Pancakes
These protein blueberry pancakes are light, fluffy and actually delicious. Cottage cheese is the secret protein source in the pancake batter, and yes, we were sceptical too! If the thought of it’s making you pull a face, you’re not alone. But trust us on this one… we gave them a go anyway and they seriously surprised us.
The blueberries pair perfectly with the maple syrup, and when topped with Greek yogurt, these pancakes are an easy way to pack plenty of protein into your breakfast, without it feeling like a “protein” breakfast.
Ingredients
200g cottage cheese
3 medium eggs
70ml milk
1tsp vanilla extract
1tbsp maple syrup
130g self-raising flour
1 tsp baking powder
1/4 tsp bicarbonate of soda
1/4 tsp salt
Fresh blueberries
How to make them
Whisk together the cottage cheese, milk and eggs before adding the vanilla extract, maple syrup and melted butter.
Next fold the flour, baking powder and bicarb and salt into the mix
Fold in the blueberries
Let the batter sit for 5 minutes
Add butter (ideally salted) to a pan on medium heat
Spoon the pancake mix into the hot pan
Let bubbles rise to the surface of each pancake and set slightly before flipping on to the other side to finish cooking
Serve with greek yogurt, fresh blueberries and a drizzle of maple syrup
