French Toast with Yogurt, Berries & Flaxseeds

Ingredients

(serves 1)

  • 2 slices of sourdough

  • 1 egg

  • ¼ cup of milk

  • ½ tsp vanilla extract (optional)

  • A pinch of cinnamon (optional)

  • Butter for the pan

  • A few spoonfuls of Greek yogurt

  • Honey to drizzle

  • A handful of mixed berries

  • A sprinkle of chia, flax, and pumpkin seeds

How to make it

  1. Whisk the egg, milk, vanilla, and cinnamon in a bowl.

  2. Heat a bit of butter or oil in a pan over medium heat.

  3. Dip the sourdough slices in the egg mix, coating both sides.

  4. Fry for 2–3 minutes each side, until golden and crisp.

  5. Top with Greek yogurt, drizzle with honey, and scatter your berries and seeds.
