Halloumi & Hot Honey Flatbread with Roasted Red Peppers & Rocket

Crispy salty halloumi, soft flatbread, and sweet hot honey pairs perfectly with roasted red peppers and fresh rocket.

INGREDIENTS

Serves 1–2

  • Halloumi

  • 1 red pepper, sliced

  • Flatbread

  • A handful of rocket

  • Hot honey (or honey mixed with sriracha or chilli flakes)

  • Olive oil

  • Salt & pepper

  • Piri piri seasoning

  • Chilli flakes (optional)

  • Tzatziki (or Greek yogurt if you’re looking for an easy way to add in some extra protein)

How to make it

  1. Heat the oven to 200°C. Toss the sliced red pepper in a little olive oil, and season with salt and pepper. You can also add chilli flakes if you want a bit of extra heat. Roast for 20–25 minutes until soft and slightly charred.

  2. Slice the halloumi and fry in a pan with a drizzle of olive oil. Once it starts to turn golden, add a sprinkle of piri piri seasoning. When both sides are browned, add a squeeze of honey or hot honey and cook for another minute until sticky.

  3. Warm or lightly toast your flatbread.

  4. Top the flatbread with the tzatziki or greek yogurt, rocket, roasted peppers, and halloumi.

If You’re Short on Time

If you don’t have time to roast the red peppers you can always use jarred roasted peppers and skip the oven all together. You can also prep the peppers the day before to make this a really speedy meal to pull together the next day.
