Sticky Beef Rice Bowl With Cucumber

Ingredients

Serves 1-2

For the beef:

  • 250g beef mince

  • 2–3 garlic cloves, finely chopped

  • 1 tbsp dark soy sauce

  • 1 tbsp sweet chilli sauce

  • 1 tbsp ginger juice

  • ½ tbsp honey

  • A pinch of chilli flakes

  • Sesame oil (for cooking)

For the rice:

  • 1 cup sushi rice

  • 1 cup water

  • Sushi rice seasoning (or rice vinegar, sugar, and salt)

To serve:

  • ½ cucumber (peeled into ribbons)

  • Sesame seeds

How to make it

  1. Rinse the rice under cold water, then add it to a pan with 1 cup water. Bring to the boil, before reducing to low heat. Cover, and cook for 10-12 minutes. Keeping the rice covered, remove it from the heat and let it steam for 10 minutes. Once the rice has sat for 10 minutes you can remove the lid, fluff it with a fork and stir through your seasoning.

  2. Whilst the rice is steaming, heat a drizzle of sesame oil in a pan and cook the beef mince until browned. Add the garlic and cook for another minute.

  3. Stir in the soy sauce, sweet chilli, ginger, and honey, along with a pinch of chilli flakes. Let it cook through until sticky. (If you want it saucier, just double the sauce ingredients and keep the same ratios.)

  4. Use a peeler to create cucumber ribbons.

  5. Serve the rice in a bowl, top with the sticky beef, add the cucumber ribbons, and finish with a sprinkle of sesame seeds.

If You’re Short on Time

If you don’t want to have to cook the rice you can use a microwave rice pouch instead. We like Tesco’s jasmine rice which is only 65p per bag.
