Mango, Kefir & Coconut Chia Pudding

Fresh, light, and perfect for busy mornings - this one’s prepped the night before so it’s ready when you are. We used Biotiful Gut Health’s Mango Kefir as it doesn’t contain any added sugar.

Ingredients

Serves 1

  • 2 tbsp chia seeds

  • ½ cup mango kefir

  • ¼ cup orange juice

  • Fresh mango chunks, to top

  • Coconut flakes, to finish

How to make it

  1. In a jar or bowl, mix the chia seeds, mango kefir, and orange juice.

  2. Stir well, leave for 10 minutes before giving it another stir.

  3. Cover and place in the fridge overnight (or at least a few hours) to thicken.

  4. In the morning, top with fresh mango and a sprinkle of coconut flakes. If you know you’ll be short on time in the morning you can always do this step before leaving it in the fridge overnight.
